99552233 008As a parent of a Type 1 diabetic, I have out of necessity become fascinated and horrified with the effects that food and diet have on the human body. This experience by far was the most trying time in my life. As a parent, having a sick child leaves one feeling helpless, depending on physicians who have no advice, except to change the insulin / carb ratios. My daughter was sick most of the time, her blood sugar remained high most of the time, no matter what she did. Her digestive system was in a toxic state, she was emotionally and physically exhausted. I am so convinced that the foods we consume and our overall health can be positively or negatively affected by the food we eat and the environment we live in.
